Crab Cakes with Sweet Chili Dipping Sauce

Succulent, golden crab cakes pair wonderfully with this recipe’s tomato-based sauce, which features chilies, garlic, and lime.

Crab Cakes

Ingredients

  • 6 slices bread, cubed
  • 1 red capsicum, stemmed, seeded, diced
  • 2 spring onions, cut into pieces
  • 3 sprigs coriander
  • 400 g (14 ounces) crab meat
  • 3 Tablespoons mayonnaise
  • 2 egg whites
  • zest of 1 lime
  • 1 pinch cayenne pepper
  • 1 dash hot sauce
  • salt and pepper, to taste
  • 3 Tablespoons olive oil

Directions

  1. To make the crab cakes, place bread pieces into the Vitamix machine and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5, using the tamper to press the ingredients into the blades.
  4. Blend for 5 to 10 seconds or until it has formed breadcrumbs. Transfer to a bowl and set aside.
    Place the red pepper, scallions, and cilantro into the Vitamix container. Add water to the 6 cup mark and secure lid.
  5. Select Variable 5. Pulse 5 to 8 times using on/off switch until coarsely chopped. Drain well before using.
  6. Place 4 ounces (113 g) crabmeat, mayonnaise, egg white, lime zest, cayenne pepper, hot sauce, salt, pepper and well drained chopped veggies into the Vitamix container.
  7. Secure lid. Continue to Pulse a few times on Variable 2, using tamper, until the mixture forms a coarse paste. Do not over process.
  8. Transfer to a bowl and mix in remaining 10 ounces (284 g) crabmeat. Stir gently to combine. Add enough of the breadcrumbs to form a stiff mixture. Put the remaining breadcrumbs on a plate. Wash the Vitamix container.
  9. Shape the crab mixture into 8 patties of equal size. Coat in the breadcrumbs, pressing the crumbs onto each side.
  10. Transfer to a baking sheet, cover with cling film and chill at least 30 minutes up to 2 hours.

Sauce

Ingredients

  • 2 Roma tomatoes, quartered
  • 110 g (4 ounces) caster sugar
  • 2 other red chillies
  • 2 garlic cloves, peeled
  • 1 Tablespoon lime juice
  • 1 Tablespoon fish sauce

Directions

  1. Place all sauce ingredients into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10. Blend for 20 to 25 seconds. Pour the sauce into a bowl and set aside.
  4. Heat the olive oil in a frying pan over a medium–high heat, add half of the crab cakes and fry for 2 minutes on each side until crisp and golden. Transfer to a plate and keep warm while you cook the remaining cakes.
  5. Serve warm with the dipping sauce.

Macaroni with Cheese Sauce

Rich, creamy cheese sauce and crumb topping make this classic dish a family favourite.

Ingredients

  • 210 g (2 cups) elbow macaroni, uncooked
  • 30 g (¼ cup) plain flour
  • 60 g (¼ cup + 1 teaspoon) light butter spread
  • ¼ teaspoon salt
  • 320 ml (1⅓ cup) skimmed milk
  • 115 g (1 cup) cheddar cheese, cubed
  • 2 slices bread
  • ⅛ teaspoon ground black pepper
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon dried oregano
  • ⅛ teaspoon dried minced onion
  • ⅛ teaspoon cayenne pepper

Directions

  1. Preheat oven to 180°C (350°F).
  2. Cook macaroni as directed on package. Drain.
  3. Spray an 20 cm X 20 cm (8-inch x 8-inch) baking dish with vegetable cooking spray then add macaroni to dish.
  4. Place butter, flour, salt, and milk into the Vitamix container in the order listed and secure lid.
  5. Select Variable 1.
  6. Turn machine on and slowly increase speed to Variable 10, then to High.
  7. Blend for 3-4 minutes or until heavy steam escapes through the lid opening. As mixture thickens, it will not splash as much.
  8. Remove the lid plug and add cheese through the lid opening.
  9. Blend for 1 minute.
  10. Pour over macaroni and mix thoroughly.
  11. Cover macaroni with bread crumb mixture and bake until top is golden brown, about 30 minutes.
  12. To make crumb topping, toast 2 pieces of bread and squeeze each piece into a ball.
  13. Select Variable 1.
  14. Turn machine on and slowly increase speed to Variable 4.
  15. Remove the lid plug.
  16. Drop each bread ball through the lid plug opening.
  17. Blend until you have crumbs. Add seasonings to the crumbs.

Chipotle Pepper Cream Sauce

For a little spice, this tofu cheese sauce includes chipotle pepper, and is delicious tossed over pasta or steamed veggies.

Ingredients:

  • 170 g (6 ounces) light tofu
  • 1 Tablespoon fat free cream cheese
  • 1 garlic clove, peeled
  • 15 g (3 Tablespoons) grated Parmesan cheese
  • 2 Tablespoons grated Romano cheese
  • 2 Tablespoons light butter spread
  • ¼ teaspoon white pepper
  • ½ chipotle in adobo sauce

Directions:

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 4 1/2-5 1/2 minutes until smooth and hot.
  5. Toss with hot pasta and serve.

Cashew Sour Cream Sauce

Ingredients

  • 125 g (1 cup) cashews, soaked 3 hours, rinsed, drained
  • 120 ml (½ cup) water
  • 45 ml (3 Tablespoons) lemon juice
  • ½ teaspoon sea salt

  • ¼ shallot
  • ground black pepper, to taste

Directions

  1. Drain soaked cashews and rinse thoroughly.
  2. Place all ingredients into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1, start the machine, and slowly increase to its highest speed.
  4. Blend for 20 seconds, or until creamy and smooth.
  5. Add additional water to the sauce to give it to a thinner texture. The sauce needs to be lighter than the soup to stay on top, otherwise it will sink to the bottom.

  • 960 ml (4 cups) chicken stock
  • 2 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 2 Roma tomatoes, quartered

  • ½ teaspoon ground cumin
  • 40 g (⅓ cup) chilli powder
  • 1 teaspoon salt
  • 60 g (½ cup) plain flour

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase to the highest speed.
  4. Blend for 6-7 minutes or until heavy steam escapes from the vented lid.

Notes

This recipe can be reduced by half and made in smaller containers.

Cherry Chipotle BBQ

This simple barbecue sauce pairs beautifully with ribs, pulled pork, roasted chicken, and salmon.

Ingredients:

  • 5 other tomatoes
  • ½ onion, peeled, diced
  • 140 g (1 cup) dried cherries
  • 55 g (¼ cup) light brown sugar
  • 60 ml (¼ cup) apple cider vinegar
  • 2 chipotle peppers, from a can
  • ¼ teaspoon chilli powder
  • 1 teaspoon salt

Directions:

  1. Heat char grill to high heat. Place tomatoes and onions on the grill and rotate while cooking. Cook until tomato skins are charred and starting to collapse, and onions begin to soften. Cool for 30 minutes.
  2. Place all ingredients into the Vitamix 40 oz. container in the order listed and secure lid.
  3. Select Power Blend.
  4. Push to Start and allow machine to complete programmed cycle.
