Almond Flour Sugar Cookies

An all-natural cookie with no added sugars or oils.

  • 385 g (1½ cup) unsweetened applesauce
  • 2 large eggs
  • 10 dates, pitted
  • 1 Tablespoon vanilla essence, optional
  • 250 g (2½ cup) almond flour
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon baking powder


  1. Place applesauce, eggs, dates, and vanilla into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to the highest speed.
  4. Blend for 45 seconds.
  5. Place flour, baking soda and baking powder into a mixing bowl.
  6. Add wet ingredients into the dry ingredients and mix well.
  7. Prepare two baking sheets with parchment paper.
  8. Using a 40 scoop (3/4 ounce scoop) portion onto baking paper.
  9. Bake on 350°F (180°C) for 15 minutes.


This cookie contains no added sugar, rather it gets its sweetness naturally from dates and applesauce.

Holiday Sugar Cookies

This recipe makes baking during the holidays both easy and fun! And if you’re feeling adventurous, try adding a teaspoon of your favourite extract for some flavour variation.

Makes: 3 dozen cookies

  • 226 g (1 cup) butter
  • 220 g (1 cup plus 1 teaspoon) sugar
  • ½ teaspoon almond extract
  • 1 large egg
  • 280 g (2⅓ cup) plain flour
  • ½ teaspoon bicarbonate of soda


  1. Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper.
  2. Place butter, sugar, almond extract, and egg into your Vitamix container in the order listed and secure the lid.
  3. Select the lowest setting. Start the machine, slowly increase speed to Variable 6, and blend for 20 seconds.
  4. Remove the lid plug and begin Pulsing as you add in half of the flour and baking soda.
  5. Stop the machine and scrape the container. Add the remaining flour and baking soda. Pulse 15 to 18 times on Variable 5, or until combined. If the dough becomes too thick, scrape sides again.
  6. Remove dough and wrap in plastic wrap. Chill in the refrigerator for 30 to 40 minutes.
  7. Roll out dough, cut into desired shapes, and place on prepared baking sheet. Bake for 8 minutes, or until golden.
