Pumpkin Chocolate Chip Blender Muffins

Who doesn’t love a good muffin, especially when it’s warm? This one packs moisture and flavour with pumpkin, and a sweet surprise with chocolate chips. Bonus: They’re easy to make and oh-so-tasty, too!

Ingredients

  • 2 large eggs
  • 60 ml (¼ cup) light olive oil
  • 245 g (1 cup) pumpkin purée
  • 60 ml (¼ cup) skimmed milk
  • 150 g (¾ cup) caster sugar
  • 220 g (1¾ cup) plain flour
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • ½ teaspoon salt
  • 120 g (½ cup) plain chocolate (50% cocoa)

Directions

  1. Preheat oven to 350°F (175°C). Lightly coat a muffin pan with cooking spray, or use cupcake liners.
  2. Place eggs, oil, pumpkin, milk, and sugar into the Vitamix container in the order listed and secure the lid.
  3. Select Variable 1 and press start. Slowly increase the speed to Variable 5 and blend for 10 seconds. Set aside.
  4. In a medium mixing bowl, thoroughly mix together the flour, baking soda, cinnamon, allspice, and salt. Stir in chocolate chips.
  5. Pour the pumpkin mixture into the bowl with the dry ingredients and mix well with a spoon.
  6. Use an ice cream scoop or a spoon to portion the batter into the muffin cups. Bake for 20 to 25 minutes.
  7. Cool on a wire rack for 5 minutes.

Gluten-Free Brownies

A delicious, gluten-free indulgence for all to enjoy.

Ingredients

  • icing sugar
  • 120 g (1 cup) chopped walnuts, optional
  • 225 g (1¼ cup) plain chocolate (50% cocoa)
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 150 g (¾ cup) caster sugar
  • 75 g (⅓ cup) butter, cut into pieces
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 25 g (¼ cup) unsweetened cocoa powder
  • 40 g (⅓ cup) cornstarch

Directions

  1. Preheat oven to 180ºC (350ºF) and grease a 20-cm (8-inch) square glass pan.
  2. In a medium-sized mixing bowl combine the cornflour, cocoa powder, cinnamon, and salt. Whisk by hand until well blended.
  3. Place butter, sugar, vanilla, and eggs into the Vitamix container in the order listed and secure lid.
    Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 10, then to High.
  5. Blend for 35 seconds or until well blended.
  6. Pour mixture into dry ingredients, add chocolate chips and walnuts and stir together to combine.
  7. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in center comes out clean.
  8. If desired, dust brownies with powdered sugar prior to serving.

Notes

When checking for doneness, because of the melted chocolate chips the toothpick may not come out clean. To tell if brownies are done, top should be firm to the touch and sides should be just beginning to turn crisp.

Oatmeal Cake

This delicious, easy-to-make Taiwanese oatmeal cake is steamed, giving it a glutinous texture.

Makes: 1 cake

Ingredients

  • 80 g (1 cup) rolled oats
  • 360 ml (1½ cup) water
  • 150 g (1 cup) lotus root powder
  • 210 g (1 cup) light brown sugar, packed

Directions

  1. Soak the dry oats in water (375 ml) for 3 to 4 hours.
  2. Drain the oats. Add all ingredients to the Vitamix container in the order listed and secure the lid.
  3. Select Variable 1, start the machine, and slowly increase to its highest speed.
  4. Blend for 2 minutes. The container should feel warm to the touch.
  5. Use a spatula to scrape the sides of the container and pour the mixture into the inner pot of a steam cooker.
  6. Shake off the surface bubbles, then sprinkle with nuts or raisins.
  7. Add 2 to 3 cups of water into the outer pot and steam for approximately 15 to 20minutes, or until set. Serve the cake after it has cooled.

Ham and Egg Quiche

A shareable morning meal, complete with fresh veggies and diced ham.

Dough

Ingredients

  • 55 g (¼ cup) butter, softened
  • 70 g (⅓ cup) 2% cottage cheese
  • 1 large egg
  • 200 g (1½ cup) spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tartar
  • ⅛ teaspoon salt

Directions

  1. Place butter, cottage cheese and egg into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 15 seconds.
  5. Combine flour, baking powder, cream of tartar and salt in a bowl.
  6. Place half of the flour mix into the Vitamix container and secure lid.
  7. Select Variable 5. Turn machine on and off to pulse 5 to 7 times to incorporate. Stop and scrape the sides of the container. Add the rest of the flour to the container and repeat the process, using tamper to press the ingredients into the blades.
  8. Remove the dough, place in saran wrap and wrap tightly. Place in refrigerator for about an hour. Pull and press into a 9 inch pie pan.

Quiche

Ingredients

  • 60 ml (¼ cup) full cream milk
  • 8 large eggs
  • 1 red capsicum, stemmed, seeded, julienned
  • 1 onion, peeled, halved
  • 2 garlic cloves, peeled
  • 2 Tablespoons olive oil
  • 1 dash chilli paste
  • 300 g (10 ounces) ham, diced

Directions

  1. Place milk, eggs, pepper, onion, garlic, olive oil and chilli paste into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5.
  4. Blend for 20 seconds.
  5. Place diced ham into the prepared quiche dough in the pan. Pour the egg mixture over top.
  6. Place in 190°C (375°F) oven until cooked through, about 45 minutes to one hour.

Notes

This is a great do ahead breakfast/brunch item. Bake off the night before and just reheat the next day.

Pistachio Lime Zucchini Cake

Enjoy this delicious gluten-free cake with a drizzle of homemade lime sauce. Garnish with extra pistachios for an added crunch.

Ingredients

  • 150 g (1½ cup) almond flour
  • 50 g (¼ cup) gluten free flour
  • 1½ teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • zest of 1 lime
  • 50 g (¼ cup) chopped pistachios
  • ¼ teaspoon Himalayan pink salt
  • 2 large eggs
  • 60 ml (¼ cup) olive oil
  • 160 ml (⅔ cup) agave nectar
  • 150 g (1 cup) chopped courgette

Directions

  1. Preheat oven to 180°C (350°F) and line a 23 x 13-cm (9 x 5-inch) loaf tin with baking paper.
  2. Combine almond flour, gluten-free flour, baking powder, baking soda, lime zest, pistachios, and salt into a bowl.
  3. Place eggs, olive oil, and agave into the container and secure the lid.
  4. Turn the dial to 1 and increase speed to Variable 5. Blend for 10 seconds, or until ingredients are combined.
  5. Remove the lid plug and add courgette through the lid plug opening.
  6. Turn the dial to 1 and increase speed to Variable 4. Blend for 15 seconds, or until courgette is evenly diced. You do not want it to be come a complete liquid.
  7. Pour blended mixture into the dry ingredients and stir to combine.
  8. Pour batter into the prepared loaf tin and bake for 20 minutes.
  9. Remove from the oven and cover with foil. Bake for a further 15 to 20 minutes, or until a knife inserted into the center comes out clean. Leave to cool.

Drizzle

Ingredients

  • 125 g (½ cup) goat or dairy-free yoghurt
  • 1 Tablespoon lime juice
  • 1 Tablespoon agave nectar

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Turn the dial to 1 and increase speed to Variable 4. Blend for 20 seconds.

Notes

To finish, pour the drizzle over the top of the cake and garnish with pistachios and lime zest.

Cheats Sausage Roll with Jamie Oliver

This is a super easy but absolutely brilliant sausage roll recipe. Jamie shows us a couple of little cheats making home made sausage rolls completely accessible and totally desirable.
